Almond bites🌰

Let's give a healthy nudge to our traditional desserts this festive season #healthytwist2


After the success with the healthier version of Mysore pak, I dared to experiment with other possible desserts. Sharing the second attempt here. This time it's a simple nut delight , easy, quick and healthily yummilicious. You might want to try too?


Ingredients:

almonds : ½ cup

milk :1 teaspoon

ghee :½ spoon

brown sugar :¼ cup+1 tbsp

water : 1/8 cup

cardamom :2 pods or ¼ tsp

Cooking Time : 10 minutes

Preparation Time : 20 minutes

Course : dessert

Makes : 12 squares



Recipe :

1. Soak almonds in hot water for 1 hour.

2. Peel off the skin and pat dry them on a kitchen towel.

3. Add a few saffron strands to the milk, mix and set aside.

4. Dry grind the almonds.Make sure that you do not make a paste but only make a smooth powder of it without granules. Do not grind till the oil from the nut oozes out. Without running the mixer at a stretch, pause in between, stir and continue.

5. Make a single string sugar syrup in a thick bottomed pan. Add the almond powder to the syrup and cook well on slow flame.

6. Once the almond absorbs all the syrup and it starts turning dry, add the saffron milk and combine well.

7.Finally add crushed cardamom/cardamom powder and ghee.

8. Combine all the ingredients well, keep stirring and cook till the almond stops sticking to the pan.

9. Remove it immediately into a greased tin. Level it smooth.

10. Garnish with almond flakes or almond slices .

11. Make cuts and keep aside till it sets.

12. Once set, demould, cut into squares and enjoy the fudgy bites.


I found the recipe on rajshri foods, altered it a bit and gave it a little healthy nudge. Soaked almond slices are used for garnishing. Brown sugar is used in the recipe to cut down the calories.
