Sharing a couple of lunch ideas for the night owl if you are one; who can't wake up early but your job needs you to; and you can't compromise on the health quotient in your lunch box. Interestingly even the junk food lovers seem to love to add this to their diet. I have had so many positive reviews received for this recipe and demand for the detailed recipe that I had to come back and share it here.

For folks who love their morning sleep, you may cook the chick peas, chop the veggies(except onion) and even make the dressing the previous evening (I always make the dressing in the morning). All you need to do in the morning before rushing for work would be just to toss them all up together and pack the box for your lunch.

Ingredients:
base ingredient:
Chickpea : 1/2 cup(soaked and cooked )
wet ingredients:
cucumber : 1/2 cup (deseeded and diced)
tomato : 1/4 cup (deseeded and diced)
onion : 1/4 cup (finely chopped)
carrots : 1/2 cup (diced)
sweet corn kernel : 1/2 cup
pineapple : 1/2 cup ( diced)
pomegranate : 2 tablespoons
bell pepper(green, red & yellow) : 1/2 cup (diced)
lettuce leaves : 2 leaves( shredded)
mint leaves : 10 leaves
green chilly : 1 ( finely chopped)
dry ingredients:
sesame seeds(roasted) : 2 tbsps
flax seeds(roasted) : 2 tbsps
walnuts : 2 tbsps
dry roasted peanuts : 4 tbsp (airfried used here)
sunflower seeds(roasted) : 2 tbsps
watermelon seeds : 2 tbsps
For the dressing:
Olive oil : 3 tbsps
lemon juice: 3 tbsps
salt : 1 tsp
Note: You may increase/decrease the quantity of any of the dry/ wet ingredients. You may also avoid any of it totally. You may add sprouted grams, fruits like grapes or berries too. Try experimenting with a new ingredient each time you are in a mood for this.
Using deseeded cucumber and tomato help to save the salad from going soggy.
Perfectly ripened pineapple enhances the flavour .
Sprouts enhance the health quotient . However they may be low on the flavour quotient.
Recipe:
In a salad mixing bowl add chick peas and the rest of the wet ingredients and toss them up.
In a smaller bowl mix salt and lemon juice well, add olive oil and combine them well.

To serve immediately:
Pour the dressing into the salad bowl, toss in the dry ingredients, give it a good mix and the salad is all set to tickle your taste buds now.
To pack for lunch:
Pack the dressing and dry ingredients separately. and just combine them when you are ready to have . This is because adding them before hand will make the salad soggy.
