Coconut Burfi/Coconut Fudge 🥥🧊

Let's give a healthy nudge to our traditional desserts this festive season #healthytwist 4


It's a bliss to be relishing all the traditional 'tyhoaar ki mithai' and still have your weight under control. Adding one more to the collection today. Coconut Barfi sets in childhood nostalgia in most of us. Let's go back to indulge in that tiny square of simple, sweet happiness; but with a healthy twist.


I am including both the variants here. Try the one you prefer and relish some today.


Ingredients:

grated coconut : 2 cups

ghee : 3 tbsp

sugar/brown sugar :1 cup

milk : 1/4 cup

pink food colour : 2 drops

green cardamom : 5

Cooking Time : 30 minutes

Preparation Time : 10 minutes

Course : dessert

Makes : 15-25 pieces depending on the size

(this recipe yielded 15 from brown sugar and 24 from regular white sugar)


Recipe:

Grate coconut . Preferably without the outer brown especially if you are preparing using white sugar.

Grease a (square/rectangular)mould and set ready.

Also crush the cardamom and measure and collect all the ingredients.

1. Place a pan and heat it. Add in ghee.

2. Transfer the grated coconut and fry it for 4-5 minutes on medium heat.


3. Add in sugar. Keep cooking on medium heat. In a while the sugar melts .Keep stirring and cooking till the moisture almost evaporates.



4. Add in the milk at this stage. Keep stirring and cooking on low-medium flame till the whole mixture solidifies to 90%.



6.Add crushed cardamom.Cook for some more time for the moisture to evaporate.



6. Take half the mixture and transfer it to the mould;spread it flat and level it.


7. To the other half add the food colour, mix it till the colour is uniformly coated. Now turn off the flame and spread it on the first layer . Level it smooth and press gently.




(you may choose to skip adding the food colour and have it plain. In that case, just transfer the whole cooked coconut together and set.)

8. You may sprinkle some fresh/dessicated coconut if your prefer. In case you do, dab it a little too.



9. After 5-10 minutes, make cuts and set it aside till it fully sets.




9. Once set demould and cut it into pieces.


Note: If you use regular white sugar, you will have the burfi set in around 1 hour.

If you are using brown sugar, it takes longer to set and it has more of a fudgy feel to it than a solid burfi.
