I’m not quite good at making rotis. We, South Indians boast about our dosa making skills 😁. I don't mean to say that I can't roll them into a perfect round. No! I Can😍. I'm speaking about the texture of the rotis, the softness.
Now, this is one roti I bet, you will never go wrong. I haven’t ever had rotis as soft as these. It’s not only simple and easy to make but healthy too. What’s more, they are so soft and tasty that you wouldn’t even need a side dish, you may just have it with pickle or sauce. Try them if you haven't and you will appreciate your culinary skills. Well, whoever tastes those, sure will.

Cooking Time : 10 Minutes

Makes 2 rotis
Ingredients:
Potato :1
Wheat flour : 1 cup
Salt : ½ tsp
Oil : 1 tsp
Recipe:
Peel, dice and boil one big potato. Dicing will help the potato cook faster. The boiling time depends on the potato . Check using a skewer or a toothpick. Get it off the flame only when it is boiled well.

Once done, remove the potatoes in a bowl, mash them and set aside to cool.
Mine this time hasn’t boiled well. It was the white variety of potato. So you find a few lumps in the dough. Doesn’t affect the quality or taste though.If that ever happens to you , use a mixer or grater instead of mashing with a spoon.

In the meanwhile take a mixing bowl. Transfer a cup of wheat flour, add salt and oil and crumble with your fingers.

Now add the boiled and mashed potatoes and knead the flour well using your hands. You need to add water only if the consistency is too tight. If not, the mashed potatoes should suffice to knead it. Here I have had to use only a teaspoon of water.

When it is done, rub a little oil on to your palm and knead it lightly once. Cover and set it aside for 20-30 minutes.

Now the dough is set , knead it once again.

Take a ball sized dough, place it on a rolling board, spread some dry flour and roll it into a flat roti.

Place a tawa/flat skillet on a high flame and let it heat. Place the roti on the skillet, cook for a few seconds on either sides till the air pockets appear and use one of these methods.

1) Toast it on the tawa till it is done. If you have rolled it well, it puffs up and it is done.

2)Transfer it to the flame and cook it on either sides.

3)Or transfer it on to a roti gas grill and roast it on either sides.
