Eggless
This mashed banana moist, sweet, cake-like quick bread has been doing rounds in the past month.I tried my hands at it too. So what if I don't have a loaf tin and the supermarkets are shut due to the pandemic!🤷♀️ I used my tart tin ;😎 😉 For a change, it looked more stylish than a loaf. It came out absolutely soft, moist and dense and the serving tray went clean in a jiffy with not a crumb left .Happy me😍

I have also tried a mini choco chip chocolate banana bread with the same batter . You will find both the recipes here.
Note: This recipe doesn't give you a dry loaf but a dense, moist and soft bread.

Ingredients :
Ripe banana : 2
Sugar : ½ cup
wheat flour : 1 cup
Curd : ½ cup
Oi l : ¼ cup
Salt : 1 pinch
Corn flour : ½ tsp
Baking powder : 1 tsp
Vanilla /banana essence : ½ tsp
Baking soda : ½ tsp
Milk : ½ cup
Oats : ¼ cup
Recipe:
Mash the bananas well with a fork or spoon.

In a mixing bowl, add the mashed banana, sugar, curd , oil and whisk and mix the ingredients well together. I am using brown sugar. You may use the regular castor sugar if you prefer.

Sift flour, baking powder , baking soda, and corn flour.

Add it to the wet mix and combine together.

Add milk , a little at time and mix well by cutting and folding together. Add essence.

Pre-heat your microwave. Grease the baking tin and pour the mixture and tap the tin. I don't have a loaf tin. So, I am using a tart tin instead.
(I have set aside a little of the mixture to bake a chocolate banana bread in the air fryer simultaneously)

Bake at 180 degree C for 25-30 minutes on convention mode. 25 minutes should be perfect. If it isn't done, bake for 5 more minutes. Though I had set the convection mode for 30 minutes, it got baked in 25 minutes.

Check at 25 minutes.Use a toothpick or skewer to check. If it comes out clean, it is done.

.....and lo! it is ready. dense, soft and moist. Adding oats has made that little difference.

Choco chip Chocolate banana bread:
To the banana mix I had set aside, I added a handful of choco chips , 1-2 spoons of cocoa powder and 2 tbsps milk.I loved all that chocolate flavour. If you aren't much of a chocolate fan, reduce the quantity of the cocoa pwd and choco chips to half.

I wanted the banana bread to look like a bread and not a cake. That's how everybody was making them. That called for a DIY . I got an aluminium foil shaped into a loaf tin. Ta-da 🤩
Grease your cake tin/ foil well.

Preheat the air fryer and bake for 15 minutes . Check and bake for another 5 minutes if you find the bread isn't done. You may bake it in the microwave too. I wanted to get it baked simultaneously without wasting time while the bigger bread was baking.
