Beetroot halwa

Though its close cousin carrot halwa is always a show stealer, this dessert is quite a favourite among many . Comparatively simpler and easier than Carrot halwa, Beetroot halwa is as strong on the health quotient. My personal favourite is carrot halwa too but this is a comfortable reason to feed myself beetroots camouflaged behind a dessert serving .

Cooking Time : 40 mins.

Serves : 6



Ingredients:


beetroot : 2

milk : 1 cup

Ghee(clarified butter) : 3 tbsp

dry fruits : ¼ cup

Sugar : ¼ cup

Cardamom powder : ½ tsp


Recipe :

Grate beetroot. This is the only tough part in this whole recipe😅

Heat 1 tbsp ghee in a frying pan and fry the dry fruits separately. I am using raisins, cashews and almonds. You may also use pistachios. I have chopped them. You may use it whole or chopped.You may dry roast the almonds and cashews instead of frying if you prefer that. It tastes great either way.

Collect them in a bowl and keep aside.

Add 2 more tbsps of ghee to the pan and add the grated beetroot.

Cook on high flame for 5 mins.

Stir at regular intervals.

Now add milk to it.

ree

Stir and mix.

ree

Cover and cook for 8-10 mins on low flame.

Stir. Cover and cook for 5 mins on medium flame

ree

Add sugar. You may use brown sugar instead of the regular white.

Mix well.

Cover and cook again for 5 mins on medium flame.

Add cardamom powder.Mix.Keep stirring and cook until it turns dry.

Add one half of the fried/roasted dry fruits.

ree

Cook till all the moisture evaporates.

Your beetroot halwa is ready. That was some good grating, stirring and waiting. All for that yummy dessert bowl.

Garnish with the other half of the dry fruits and serve.
