Not every recipe wants you to toil in the kitchen to please the taste buds. This recipe on the blog today is a testimony to that. I wonder how many of you have tasted this. I have hogged on this as a kid. I remember having 6 slices or more and still having the appetite for it. I don't remember when this stopped appearing on our menu.


It is simply enough bread dunked in sweetened coconut milk. Mom would use white bread and regular sugar. I have replaced them with brown bread and brown sugar. Let me share with you this simple delightful recipe. Do try it immediately.



Preparation Time : 5-8 mins

Cooking Time : Nil

Course : Breakfast/snack

Makes : 4


Ingredients:

Bread : 4 slices

Coconut : 1 cup

Sugar : 2 tbsp

Water :3/4 cup +1 tbsp


Preparation:


Grate half a coconut. That should fetch you 1 cup. (fresh coconuts are best to extract milk. If they are old and dry, they don't serve the purpose well. The tender ones are better.)

Put it into a blender. Add 1/2 cup water.

That is, enough water to cover the coconut in the blender.

Blend it well to extract the milk.

Transfer it to a sieve and collect the coconut milk in a bowl.

Most of it separates and collects in the bowl as soon as you transfer into the sieve.

Collect the rest by pressing with a spoon or spatula.

Put the residue back into the blender.

Add 1/4+1 tbsp water. That's again enough water to cover the coconut.

Blend again and extract the milk from that.Sieve and collect all the milk like before. The reside may be used to make coconut flour if you like.

Into the extracted coconut milk, add sugar. I'm using brown sugar.(You may add cardamom powder for flavouring. I like them plain and haven't added any)

Mix it well till the sugar dissolves.

Cut the bread slices into various shapes if you are planning to feed it to the kids. Or use the slices as such.

Dunk a bread slice in the coconut milk and soak it from both sides. Do not leave it immersed in the milk or more than 5-6 seconds. They absorb the milk quite quickly and if you leave them in the milk for long, you won't be able to take them out in shape.


Place it on the serving dish.

Spoon in some more milk.

That's it .You are done. As simple as that. Garnish with a topping of your choice or serve plain.

I have used brown sugar itself for the garnishing.
