Choco chip Muffins & More

Is there anyone who doesn't love muffins? Not one I know of 😍Muffins are perhaps the easiest of bakes. I didn't know that myself till I tried. I always thought baking those cute delightful cups would be quite a challenge. I was utterly wrong. Never think twice when you crave to have those. Just get on your apron and start baking. It's totally worth it. Why don't you just pick it up from a baker? 'Coz when you do that you miss the most beautiful joy about a muffin-the aroma that fills your kitchen when you bake. That's worth more than having a muffin itself. Well, there's something as beautiful. When you watch a little angel look at those muffins with glimmer in the eyes and smack the lips after the first bite.

Let me share with you today a simple recipe I tried. It's a basic muffin recipe with choco chips in it. You will find 2 more variations-a tutti frutti and a jam filled one. You can try more with the same basic recipe- may be a blueberry or strawberry muffin?


Let's bake, shall we?

Preparation time : 10 minutes

Cooking Time : 30 minutes

Course : Breakfast/snack

Makes : 35


Contains eggs 🥚


Ingredients:

all purpose/wheat flour : 2 cups

baking powder : 1 tbsp

baking soda : 1 tsp

salt : ½ tsp

butter : ½ cup

Sugar(regular/brown) : ¾ cup

eggs : 2 eggs

milk : 1 cup

vanilla essence : 1 tbsp

choco chips : 1 cup

tutti frutti : 1/2 cup

jam : 2 tbsp


If you want to make only choco chip muffins , you will require 1½ cup choco chips.

For jam muffins-Use any jam . I have used mixed fruit jam here. You may use blueberry or pineapple or any other of your choice or try more than one flavour and use a different jam in each muffin.

I have divided the batter into 3 parts. Used 2 for choco chip muffins and 1 part for both tutti frutti and jam muffins. It is to the same tutti frutti batter that I have added jam. You may if you like ,divide it into further half and use one for tutti frutti muffin and the other one for jam muffin.


Take a look at the tutti frutti and jam muffins.

Take flour in a sieve.

Add baking powder, baking soda and salt and sieve them together twice and keep aside.Sieving them together helps to combine them well.

In a mixing bowl take sugar and add butter to it. You may melt and add if you so like but ensure that you add only after it is cool. I'm adding butter at room temperature.

Use an electric whisk.

ree

Whisk butter and sugar till the sugar melts.

Add milk and whisk again.

ree

Now break in the eggs into it and whisk.

Now that you have added eggs, do not forget to add essence.

When all the wet ingredients are combined well, add the dry ingredients.

Cut-fold and mix it well.

ree

Take one part aside and add 3/4 of your choco chips . You will need the rest 1/4 for topping.

Into the other part of the batter add 3/4 of the tutti-frutti.

Set your air fryer/oven/microwave on pre-heat mode and grease your muffin moulds. My muffin moulds are not the jumbo ones. They are rather small and this batter gave me 35 muffins.

Mix the choco chips into the batter.

Also mix the tutti frutti in the smaller bowl.

Fill in the mould and top it with a few choco chips.Do not fill up to the rim . They rise when they bake.

Arrange the moulds in the baking tray.

Put the tray in the pre-heated air fryer/oven. I'm baking these in an air fryer. I'm more comfortable baking in an air fryer than a microwave.

Bake them for 10 mins at 180 degrees.In the meanwhile, you may fill the moulds with next batch if you have more moulds or just sit back and enjoy the aroma.

Ta-da! Look what you have baked.

They are baked perfectly. See that dome? They have a slightly crisp crust and you feel the softness when you take in the next bite.

What a beautiful sight to behold!

Arrange them on a wire rack .

Take them out of the mould. If you leave them as such, they will turn damp at the base with the moisture beneath.

For the tutti frutti muffins, fill in the batter from the smaller bowl.

Top them with more tutti frutti.

ree

Bake as before.and you have one more batch ready.

The kids are sure gonna love all those colours.

Remember to demould .

For the jam muffins, pour a little of the tutti frutti batter or plain batter. Spoon in a small amount of jam.

Fill and pour more batter over it.

ree

Follow the previous steps for baking and you have the next batch of the third flavour. Look at the jam oozing out of some of those.

Do not forget to demould them and set them on a rack.

Look at your jam filled muffins. They have turned out so soft.

ree

Bake when you are in stress and you will have a lovely time. Trust me, baking is an absolute stress buster ! Don't ask me about cleaning all those butter coated bowls once you are done.😅


Enjoy them hot or store them and keep enjoying. They taste better the next day!
