It was on my flight from the City of Dreams to the Pink City that I happened to taste this yummiest snack. I fell in love with the first bite of this savoury snack which I had till then mistaken for a slice of plum cake :D :D.
I couldn't help enquiring the stewardess what the dish was.She seemed to be amused, yet politely confessed that she didn't know what it exactly was. "Ma'am, it's some kind of vadi" is all she could say. Nevertheless, she promised to get back to me with some authentic information when she realized I was genuinely keen on knowing more about it. She vanished after that. When I had almost lost all hopes of completing my search for this new found love, the stewardess came to me with a smile and informed that it's called Kothambir Vadi. That was enough to follow it up. The official trip I was on lasted almost a fortnight. I tried my hand at it once I reached back home .Sharing my attempt with all you foodies.

Cooking Time : 20 minutes
Course : Breakfast/ Snack
Servings : 20 Fritters
Ingredients:
Gram Flour -1 standard cup
Coriander -1&1/2 cup
Ginger -Chilli Paste - 1 tsp
Oil -2 tsp for the recipe and around 1&1/2 cups for deep frying
Chilli Powder - 1 tsp
Garam Masala - 1/2 tsp(Indian mixed spices)
Turmeric powder -1/2 tsp
Carom Seeds -1/2 tsp
Baking Powder/soda -1/4 tsp
Salt -3/4 tsp(to taste)
Water - 1/2 liter
Recipe:
Clean the coriander leaves, wash them well under running water and chop them fine.
To a clean bowl , add the chopped coriander leaves, gram flour and the rest of the ingredients and mix them well.

Knead well using your hand bringing it to a tight consistency. Add a little water for the right consistency. If the dough gets too loose, you may add a little extra gram flour at a later stage.

Rub a little oil on to your palms and on the working top.

Place the dough on the working top and roll it evenly.

Get the steamer ready with 1/2 litre of water.

and place the rolled dough on the plate.

Place the steaming plate in the steamer .
Cook it covered on high flame for 8-10 minutes and simmer for 5 minutes.

Use a skewer or toothpick to check if it is done. ( it does not stick to the skewer if done )

Option 1: Deep Fried Vadis
Place a pan on the stove. pour 1-2 cups of oil for frying( To a level where the vadis /fritters may be immersed) . Bring the oil to a high heat and fry the fritters for 2-3 minutes.

Place a piece of aluminium foil in the airfryer, brush oil, place the fritters on the foil,

brush the fritters with oil and air fry at 170-180 Degree for 6-8 minutes.
