Next time your recipe calls for desiccated coconut and you don't find any in your pantry, don't feel disappointed. Making them at home is as easy as ABC. Make some in your free time and use up whenever you wish.

Let's get started.

Preparation Time : 30-35 minutes

Ingredients : Fresh coconut

Take a fresh coconut. Break it and remove the water.

Follow one of the methods

1) Take out the kernel from the shell , remove the outer brown skin using a peeler or knife. Cut the white kernel into small pieces and dry grind in a mixer.

OR

2)Shred it using a coconut grater.Be careful that you grate only the white kernel and not the darker outer skin.

Place a heavy bottomed wide pan and heat it. Do not grease the pan.

Transfer the grated coconut into the pan and bring down the flame to low.

All you need to do is to keep stirring the coconut till it becomes fully dry.

This takes quite some patience . Initially you will feel that you have been continuously stirring but there is no change in the grated coconut in the pan.

It takes some 10 minutes for the coconut to start drying and 25-30 minutes for it to be ready. You will start noticing it getting dry.

Cook it all through on low flame and keep stirring or you will end up roasting up the coconut instead of drying.

Take it off the flame when it is totally dry and transfer it to a flat plate to cool it .

Transfer it to a jar once it cools down .

You may store it in the fridge for up to 2 months.

Make some in your free time and enjoy the process.
