South Indian filter coffee is made by mixing frothy , boiled milk with the infusion obtained by percolation brewing of finely ground coffee powder in a traditional Indian filter.The filter consists of two cylindrical vessels. The top vessel with perforations in it and the base vessel that collects the coffee brew. The filter also comes with a a pressing disc .
I have always loved the traditional filter coffee . It was not until 2 years back that I dared to make it myself. When I found this coffee substitute, I couldn't wait to try it out. The result was lovely filter coffee free from caffeine.

Requirements:
chickpea coffee powder
sugar
milk
filter coffee maker
Let me introduce you to my filter coffee maker. It is a ceramic one. It has a base to collect the coffee decoction ,and a top attachment with holes for percolation. I don't have the pressing disc . So I use a spoon to serve the purpose. I don't know if it came without that attachment or I misplaced it somewhere, as , for a long time after I received it, I had no idea what it was.It remained as a show piece among the kitchen crockery.Seriously😕

Preparation:
Boil a cup of water.
Set the top attachment on the base layer of the container.

Add 3-4 spoons of chickpea coffee powder.

Press it down with the disc. I'm using a spoon.

Fill in hot water till the rim of the top layer and close the lid.

Wait for it to percolate and add some more water.

Wait till all of it brews and collects in the base layer.

Let the coffee percolate and collect in the base layer. It will take 20-15 minutes.
If the holes of the coffee maker are too small, stir lightly with a fork for the decoction to percolate.

This is how you will find it in the base of the container.(The decoction needn't be immediately consumed. Keep it ready and use later .)

When your coffee decoction is ready, bring a cup of milk to a boil. Add 1 spoon sugar, whisk and get it frothy .

In a cup, take 1/4 of the decoction.
(the decoction looks paler here as there was a little milk in the cup as I had used the same cup to measure the milk)

Pour the boiled milk over it into the cup .

Add sugar and decoction to your taste depending on how strong or light you like your coffee.
Usually, sugar is added to the coffee cup and then the decoction and milk. I prefer adding sugar to the milk after the first boil and then whisk it and boil again till it turns frothy .
