Wheat Muffins:

Snacking healthy is always a happy choice than saying no to snacking. I am someone who can keep snacking the whole day. And when you say healthy snacking, should it always be some dry roasted chickpeas or lotus seeds? Nay! It could be cakes and muffins too.


Here is a healthy version of the regular muffin. The unhealthy all-purpose flour and sugar have been replaced with wheat flour and jaggery. To give it an over dose of health quotient, oat flakes are added too.

Excited? Get your apron on and set off on baking mode !


Cooking time : 20 minutes

Preparation time : 15 minutes

Makes : 12 mini sized muffins

Course : Snack/Breakfast

Ingredients:

Wheat flour - 4 tablespoons

Banana - ¼ cup (fully ripe for the best results)

Butter - ¼ cup(unsalted)

Powdered jaggery - ¼ cup

Oat flakes - ¼ cup

Assorted nuts - 3 tablespoons

Baking powder - ½ teaspoon

Recipe:

Dry roast the dry fruits. Chop and keep aside. I have used cashews, almonds and walnuts. You may prefer to have more of your choice , use just one or not use this ingredient at all. You may also have them chopped and added without roasting. I use them roasted in all my recipes . I find the flavour irresistible.


Transfer all the dry ingredients( flour, baking powder,oats and a spoon of chopped nuts) to a bowl. Give it a good mix. You may add a pinch of salt (optional). The oats may be powdered and added or as such. I haven’t powdered them.

In a mixing bowl take butter (at room temperature), add jaggery to it.

Cream butter and jaggery well . I have used an electric hand blender here. Use a whisk if you don't have one of these.

To this add ¼ cup fully ripe banana( A regular sized banana mashed should make it ¼ cup. )

Combine banana with the whisked cream.

Now add the dry ingredients to this gradually , a little at a time and combine.

Set the air fryer/oven for preheating and grease the muffin moulds.

Pour in the batter into the greased moulds . (You may fill it to the brim unlike other cupcake batter. This will not rise much and overflow as wheat flour is used. )

Top it with the remaining chopped nuts.

Place them in the airfryer.

I have airfryed the muffins for 15 minutes at 180 degrees with a standby time of 5 minutes.

You may bake them either in a microwave or a regular oven. The baking time may alter depending on the settings of your gadget. The temperature and duration alters when baked in an oven/microwave.

The aroma will already have started filling the air.

And....they are done. Crisp from outside. Softest from inside with a crunch of oats and nuts .

Once done, take them out of the muffin moulds and set them upside down on a tray to set. They will get soggy if you leave them as such.

Bake them and serve hot or cold as a breakfast recipe or an evening snack. It’s sure to turn a favourite even with the kids.
