Mango Sorbet 🍨

You will hardly find me using fruits in recipes. I am somebody who believes fruits are best had as fruits, relishing their sweetness and taking in all the fibre. Very rarely do I turn them into other forms. This week, you will find a few fruit summer recipes shared on the blog. To begin with, here's the king of fruits!


Sorbet /sɔːbeɪ/ is basically a frozen dessert and has frozen fruits and single syrup or honey as the main ingredients. They are more icy and nor creamy. Unlike ice creams, Sorbets do not contain any dairy ingredients. So you can afford it even if you are on a diet.😉

This is a mango sorbet. I have used Banganapalli mangoes here.You may use any good mangoes available at your place. It's mango season and there is no dearth of mangoes.

Ingredients:


Mango : 2 cups

honey : 1/4 cup or single syrup

lemon juice : 2 tbsp

salt : a pinch


Cut mangoes roughly and freeze overnight. I have frozen for around 14 hours.

Put them into a blender.

Add lemon juice.

ree

Add salt.

ree

Add single syrup or honey. (I'm using part honey and part single syrup made from brown sugar and not the regular white castor sugar)

If the term single syrup is new to you, let me help you. It is syrup made with one part granulated sugar and one part water(1:1). Just heat water and add sugar. Stir and dissolve sugar on low flame. Cool it down. You may make in bulk and store it in glass containers upto 3 weeks in the refrigerator.


Add lemon juice and single syrup or honey gradually and not all at a time. Also the quantity depends on the sweetness of the fruit. So, add a little initially and as you blend increase the quantity if required.


Scrape from the sides.

Run the blender to form a smooth paste.

Now transfer it back into an airtight container. I am transferring it into the same container I had used to freeze mangoes.

Use a spatula and level it up.

Use a cling wrap and cover it .Covering it with a cling wrap helps stop forming ice crystals.

Place the lid. Leave it back in the freezer for 2-3 hours.

The mango is set now.

ree

Scoop it out with a scoop or spoon.

ree

Arrange in a bowl or ice cream cup.

ree

Serve plain or use a topping of your choice.

I have used some homemade tutti frutti as topping 😋
