Peas Pulao

This one pot meal is my comfort and luxury. I'm a big green peas lover and mint is my favourite herb. The combination of two of my favourites in this recipe makes it my personal favourite.

Preparation time : 10 minutes
Cooking time : 10 mins
Course : Main course/lunch
Serves : 3

Ingredients:
Rice : 1 cup
Green peas : 1 cup
Onion : 1 medium size
Green chillies : 4-5
Ginger garlic paste : 1 tbsp
Ghee : 3 tbsp
Cumin seeds : 1 tsp
Cloves : 6
Bay leaf : 1
Cardamom : 4
Cinnamon : one inch stick
Pepper corns : 8 (optional)
star anise : 2
Salt : 2 tsp
Garam masala : ¼ tsp
Pepper-fennel pwd : ½ tsp (optional)
Split Cashews : 12-15
Coriander : 2 tbsp
Mint leaves : 2 tbsp

Recipe :
Clean and soak rice for 10 minutes. I'm using basmati rice here. So, ten minutes of soaking would do. Otherwise you would need to soak rice for 30 mins .

Place a cooker. Heat 1 tbsp ghee . Fry cashews and keep aside.

Add some more ghee and splutter cumin seeds .

Add all the whole spices-cloves , bay leaf , cardamom cinnamon,star anise and sauté.

Add sliced onion and cook till they get translucent.

Add split green chillies, ginger garlic paste.

Now add fresh green peas and sauté for 2-3 minutes.


Drain water and add the soaked rice. Saute gently and cook for a minute.
You may add the fried cashews at this stage or garnish while serving.

Add the chopped herbs.

Now add water, salt, garam masala , pepper-fennel powder . Check salt.
Add 1 more spoon of ghee, give a final mix and cook for 2 whistles.
Let it sit for 5 minutes. Your green peas pulao is ready.

Remove the bay leaf(. Very gently mix so as not to break the soft rice.


Serve hot with mint cucumber raita or an accompaniment of your choice.
