Shavige Uppittu#Vermicelli Upma#Semiya UpmašŸœ

This is a one of the tastiest and easiest breakfast recipes of Karnataka. As a kid, I would never have these. I would staunchly believe that vermicelli is meant for making yummy semiya payasa/kheer and not to be spoiled by making it savoury. Upma for me always had to be semolina upma and I haven't met a bigger fan of upma than I. I don't know when I took a liking to this. Must be during one of those lunch break food sharing sessions at work when I tasted the authentic Karnataka recipe. No matter how hard I try, I never get the real feel of having it from my Kannadiga colleagues' tiffin box, though. šŸ˜… If you are a Kannidaga reading this and can tell me if I have missed out on something, do let me knowšŸ˜Š


Let's get cooking this easy , healthy breakfast .


Preparation Time : 10 minutes

Cooking Time : 15 minutes

Course : Breakfast

Serves : 3



Ingredients :

Vermicelli : 1 Ā½ cups

Onion : 4 tbsp

Carrots : 3 tbsp

peas : 3 tbsp

capsicum : 2 tbsp

beans : 2 tbsp

green chillies : 4

curry leaves : 8

ginger paste : Ā½ tsp

lemon : Ā½

Ghee : 3 tbsp(clarified butter)

Oil : 2 tbsp

coriander leaves : 2 tbsp

split chickpeas : 1 tsp (chana dal)

black gram split : 1 tsp (urad dal )

mustard : 1 tsp

peanuts(roasted) : 20

cashew(split) : 10

turmeric pwd : Ā¼ tsp

salt : 1 tsp


Recipe:


Heat up a wok, add 2 tssp ghee , free the cashews and keep aside.If the peanuts aren't roasted, fry them too . I'm using roasted peanuts.

In the same wok, add the vermicelli and roast them on low-medium flame till they turn golden brown.



Bring 2 Ā½ cups water to a boil. add vermicelli and cook for 3-4 minutes with Ā½ tsp salt.


Drain excess water and set aside.

In the wok, add in oil and splutter mustard and fry black gram and split chickpeas.

Add curry leaves, chilli and ginger paste and saute.

Now add onion and saute and cook for 2 minutes.

Add in turmeric and Ā½ tsp salt .

Add beans, peas and capsicum. If you are using diced carrots, add them too. I'm using grated carrots. You may blanch the veggies and add if you prefer.

Mix well and cook covered for 4-5 minutes. Let it simmer and the vegetables get cooked in the moisture released from them.

Toss in the grated carrots and cook for 2 minutes.Check salt and add if needed.

Add the boiled vermicelli, coriander leaves, roasted peanuts and fried cashews.

Combine everything well gently. Take care that you work with light hands so that you don't break the soft vermicelli .

Cover and cook for a minute. Switch off the flame.

Add lemon juice and mix.

Top it with a spoon of ghee and you are ready to serve an easy, healthy, tasty breakfast.
