This fat free fibrous root vegetable is often not as celebrated as another popular root vegetable potatoes who find their place in all kinds of recipes. Most of us have it steamed, roasted or as chips. I have always loved it in the form of payasam. Sharing that recipe with you today from my mom's kitchen. Who doesn't like to try something new?

Ingredients:

Sweet potatoes : 1 kg

Sugar : ¼ kg

Coconut : ½ shell (grated)

Salt : 1 pinch

Water : 1 cup

Cooking Time : 20 minutes

Preparation Time : 5 minutes

Course : Dessert

Recipe :

Clean the sweet potatoes well. Boil them . Set them aside to cool.

When they are cool enough to be handled , peel off their skin.

Mash them well.

Place a thick bottomed pan and pour ¾ cup water.

When the water starts boiling, add sugar. You may use brown sugar instead of white. You may use jaggery too. I haven't tried jaggery in this recipe yet.

Get the grated coconut ready.

When the sugar starts melting, add coconut and cook.

Keep stirring . Add a pinch of salt.

The coconut is done. Now, add the mashed sweet potatoes

Combine well and cook till it bubbles. If you feel it is too thick add the remaining ¼ cup water. This depends on the quality of the sweet potatoes. Some are quite fibrous and soft and require less water.

Your payasam is ready. You may add 1/4 spoon of cardamom powder and dry fruits like you do for the regular kheer . I prefer having it plain.

That’s a whole bowl of healthy dessert for you. Appetising and filling.
