If you enjoyed that mango sorbet on the blog yesterday, try this one out too. You will find this milder version as appealing as the lovely mango sorbet. The most commonly found summer fruit, watermelon is such a refreshing treat and its fine colour is a feast for your eyes.

Try this out and you will simply love it.

Ingredients:

Watermelon : 4 cups

Lemon : 1

Simple syrup : 2 tbsp

Honey : 3 tbsp

Mint : 4 leaves(optional)

Preparation:

Roughly chop watermelon . Remove seeds and freeze them for 15-20 hours.

Put them into your blender in batches. Adding honey and simple syrup gradually.

They take some time as they are frozen . Run the blender at intervals.

Stop and scrape from the sides.

Add lemon juice and sweeteners depending on the sweetness of the fruits. Adding mint is optional . It gives a refreshing lift to the sorbet. Try adding a few if you have some fresh ones available.

Taste in between and grind to a smooth paste.

Transfer into an airtight container.

Level it up with a spatula.

Cover it with a cling wrap.

Close the lid and put it back into the freezer for 2-3 hours.

Check if it is set. If your watermelon was more watery than fleshy or if you had to add more simple syrup for sweetening, it will take upto 6 hours for it to set.

It is set and can be relished now.Look at that colour !

Scoop it out

Enjoy your sorbet. Garnish it with fresh mint or for a change why not holy basil ?

Stay cool in the summers.
