Buttercream Chocolate Frosting on Chocolate Sponge 🎂

Baking is always pure joy and when you bake for your loved ones it doubles your joy ....and to add to it when you attempt something for the first time and it comes out beyond your imagination, your joy would know no bounds. Baked this for my nephew's 19th as he bid farewell to his teenage. He not only blew the candles and cut it but relished and had it all without making faces 😂. That's not a usual scene at home with that fussy eater !😅


Let me share with you the recipe. The frosting wasn't planned. I had whipping cream in the fridge which I had planned to whip and use for both frosting and layering. But it so happened that when I got the cake ready and took the cream can out, found that it had got spoiled. So, I had to find an alternative as I had to get it ready before he reached home from college and I didn't want him to cut a sponge cake 😒. All's well that end's well. The results were lovely. I couldn't spend much time on beautifying it due to time constraints though.Also I don't have the pictorial of the frosting as I was in a hurry to get it completed.


Ingredients:

For the chocolate sponge

All purpose Flour : 3/4 cup

Cocoa powder : ¼ cup

Baking powder : 1 tsp

Baking soda : 1/2 tsp

Salt : 1/4 tsp

Eggs : 4

Milk : 4 tbsp

Vanilla : 1 tsp

Sugar : 1/2 cup

Oil : ¼ cup

Lemon juice :1/2 tsp


For the Buttercream Chocolate Frosting:

Butter : 220 gms

Icing sugar : 4 cups

Cocoa pwd : ½ cup

Milk : 2 tbsp (if required)

Vanilla : 1 tsp


Preparation:


Take all the dry ingredients (except sugar) - flour, cocoa powder ,baking powder, baking soda and salt






Sift them all together once.


Put it back into the sieve and sift again once more to blend them together.


After sifting them twice, combine them using a spatula.


In another bowl, take the egg yolks. Keep the whites aside.

Add milk.

Add 1/4 cup sugar.

Add oil

Add vanilla essence

Mix the ingredients by whisking them together.

Whisk till the sugar dissolves and the ingredients blend well.


Now into the egg mix and the dry flour a little at a time.

Mix well.

Combine both the wet and dry ingredients into a fine blend.


In another bowl, add the egg whites.(The bowl and beater blades are chilled in the fridge for an hour) Wipe them dry before using, if there is moisture on them.

Using an electric beater, whisk the egg white.

Whisk them well till they becomes light and fluffy.

Now add 1/4 cup sugar.

Continue whisking

Add 1 tsp lemon juice.

Check for soft peaks.

Once the egg whites reach this stage, it is ready. You can notice the stiff peaks .

Transfer the beaten egg whites gradually into the egg and flour mix and fold in.


Do not mix. Gently fold the egg whites in well and your cake batter is ready.

Set your Oven on preheat . I'm baking on the convection mode in a microwave.

Get your baking dish ready. Grease it, dust it with flour. Line with a butter paper

Pour the cake batter into your baking tin and tap.

Once preheated, place the cake tin in the oven. I have put the tin on a water bath.(The tin is placed on a baking pan with hot water upto 1 inch of the tin.)



Bake your cake at 150 degrees for 20 mins or until done.

Check with a skewer .

If it comes clean, the cake is ready.

Once cooled, put it on a wire rack.


Frosting:


Only the first step of the pictorial is included.I am sharing the complete details for you here and that should help you to get it perfectly right too.


In a bowl add butter, beat well with an electric whisk adding icing sugar gradually.Add vanilla essence or chocolate essence for flavour. Beat till a fine texture is reached and it is ready to use on your cake.(Add 1-2 spoons of milk if you feel the frosting has got too thick. and blend well.)



Your cake would have come down to room temperature by the. Cut it into two slices. Take the first layer. Poke it with fork, brush sugar syrup and spread a layer of the frosting. Place the second layer. Level the top if it has a dome. Poke with fork, brush sugar syrup and do the crumb coating. Apply the final layer of your frosting and make patterns with any nozzle on the piping back.


You can see the frosting isn't perfect but enough to get your eyes shining at your first attempt.I'm sure I will try and make it better the next time.🤩
