Coconut Cookies šŸŖšŸ„„šŸ¤¤

Remember my previous post? Yes! When I have some desiccated coconut ready, why wouldn't I try my hands at coconut cookies? They are my all time favourite cookies. As always, I am giving you two options. The regular coconut cookies and a healthier version. Bake whichever you please.

This was my first attempt at making cookies. I expected it to be simple and easy.It turned out to be quite a challenge.But, no regrets! Anything for those flavoursome crispy cookies.šŸ¤¤

Healthier version
regular version


Preparation Time : 10 minutes

Baking Time : 10-15 minutes

Course : Snack

Makes : 12 pieces


Ingredients :

Desiccated Coconut : 1/4 cup(link for homemade one given at the end of the page)

Butter : 1/4 cup

Powdered Sugar : 1/4 cup

All Purpose flour : 1/2 cup

Baking Powder : 1/2 tsp

Baking Soda : 1/8 tsp

Salt : a pinch

Vanilla essence : 2 drops

Milk


Preparation:

In a bowl take powdered sugar and butter.

Whisk them up till they become light and fluffy and the colour changes.

Add vanilla essence. This is optional.

Mix it well.

In another bowl take your dry ingredients-flour, desiccated coconut, baking powder, baking soda and salt. Combine them together. Baking soda is optional.

Add it to the wet sugar and butter mix

Fold it in.

Knead gently and make a tight dough.

Pick a small potion of the dough.

The size may be that of a small sized lemon.

Make a smooth ball shaping gently with your palms.

Flatten it a bit.(You may shape them as per your choice.)

Coat with desiccated coconut.


Arrange on the baking tray.You may grease the tray or line it with a parchment paper.

Make sure there is enough gap between each shaped cookie dough. They expand when they bake.

Put the tray into your preheated oven/microwave/airfrier. I'm baking them in a microwave on the convection mode.

Bake them for 10-12 minutes.

Observe in between

Your hot, crisp cookies are ready.

Let them cool down to room temperature before you store them in an airtight container.

You may follow the same procedure and ingredients for the healthier version with some minute changes.Use wheat flour instead of all purpose flour. Replace white regular sugar with brown sugar.

The baking time for the whole-wheat flour cookies may be increased by up to 4-5 minutes.


You may also try some buttery,crispier,crunchier ones by reducing the quantity of flour, keeping it equal to the butter ratio or a bit more than that and increasing the quantity of desiccated coconut to double . The baking time required would only be 4-5 minutes. They bake pretty fast also expand twice their size. So place them at comfortable distance when you pop the tray into the oven. You might need a spoon to scoop out the dough.

This distance will be too less for them to expand. Do not place so many at the same time.

This is how crisp and buttery they turn out.

A few tips just in case you find yourself in a tight spot.Don't quit if you find it failing at some point. Hold on to it. You can save it at any point conveniently.

In case you notice that the dough is too loose, just add a bit more flour. In case you find it too tight, just add some milk at room temperature, a spoon or two will fix it.

Once your dough is ready and you find it difficult to coat it with coconut, dunk them in milk and then coat with desiccated coconut.

When you place them in the baking tray, leave enough space for them to expand.

Finally,keep in mind that the baking time depends on your gadget settings and also the consistency of the dough and the shape and thickness of your cookies. It can take between 10-18 minutes. So check in between and decide accordingly.
